A flavorful and spicy shrimp soup with a rich tomato and seafood broth, perfect for a comforting meal with a kick.

Ingredients

Dairy and Aromatics

  • 0.25 cup butter
  • 1 large shallot (finely chopped)
  • 5 cloves garlic (pressed or minced)
  • 1 Tablespoon gluten free flour

Broth and Stock

  • 3 cups chicken stock
  • 2 cups seafood stock (I like Imagine brand)
  • 1 cup tomato sauce

Spices and Seasonings

  • 2 jalapeños jalapeños (divided, 1 sliced from the ribs/seeds, 1 into rings)
  • 3 small bay leaves
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon dried thyme
  • 0.25 teaspoon white pepper

Seafood

  • 0.75 lb jumbo shrimp (peeled and deveined)

Citrus and Garnishes

  • 2 limes limes (1 cut in half, 1 into wedges)

For serving

  • as needed cooked white rice, chopped fresh cilantro, lime wedges

Instructions 

  • Melt butter, sauté shallots and garlic until tender, then stir in flour and cook briefly.
  • Add tomato sauce, seafood and chicken stocks, sliced jalapeño, bay leaves, and spices. Simmer for 30 minutes, then remove bay leaves and jalapeños. Add lime juice and adjust salt.
  • Bring soup to a simmer, add shrimp, and cook until pink, about 1-2 minutes. Serve with rice, cilantro, and lime wedges.

Notes

Use fresh lime juice for best flavor and adjust seasoning to taste.
