Ingredients

1largeshallot (finely chopped)
5clovesgarlic (pressed or minced)
1Tablespoongluten free flour
Broth and Stock
3cupschicken stock
2cupsseafood stock (I like Imagine brand)
1cuptomato sauce
Spices and Seasonings
2jalapeñosjalapeños (divided, 1 sliced from the ribs/seeds, 1 into rings)
3smallbay leaves
0.5teaspoondried oregano
0.5teaspoonsalt
0.25teaspoondried thyme
0.25teaspoonwhite pepper
Seafood
0.75lbjumbo shrimp (peeled and deveined)
Citrus and Garnishes
2limeslimes (1 cut in half, 1 into wedges)
For serving
as neededcooked white rice, chopped fresh cilantro, lime wedges
Instructions
Melt butter, sauté shallots and garlic until tender, then stir in flour and cook briefly.
Add tomato sauce, seafood and chicken stocks, sliced jalapeño, bay leaves, and spices. Simmer for 30 minutes, then remove bay leaves and jalapeños. Add lime juice and adjust salt.
Bring soup to a simmer, add shrimp, and cook until pink, about 1-2 minutes. Serve with rice, cilantro, and lime wedges.
Notes
Use fresh lime juice for best flavor and adjust seasoning to taste.
