A flavorful and spicy shrimp sandwich perfect for a quick lunch or dinner, combining smoky chipotle avocado mayo with tender shrimp.

Ingredients

Spice Mix

  • 0.5 teaspoon cumin
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon kosher salt
  • 0.25 teaspoon chili powder
  • 2 teaspoons olive oil

Shrimp

  • 1 pound medium shrimp (about 20 peeled and deveined)

Avocado

  • 1 avocado pitted and diced
  • 0.5 cup mayonnaise
  • 1 teaspoon lime juice
  • 0.25 teaspoon kosher salt

French rolls

Romaine lettuce leaves

Instructions 

  • Mix cumin, garlic powder, 0.25 tsp kosher salt, chili powder, and olive oil. Toss shrimp in the mixture.
  • Blend avocado, mayonnaise, chipotle pepper, lime juice, and 0.25 tsp salt until smooth.
  • Cook shrimp in a skillet over medium heat until pink, about 5 minutes.
  • Toast rolls if desired. Spread chipotle avocado mayo on rolls. Add lettuce and 10 shrimp per sandwich. Serve.

Notes

For extra flavor, add a squeeze of lime before serving.
