Instructions
Mix cumin, garlic powder, 0.25 tsp kosher salt, chili powder, and olive oil. Toss shrimp in the mixture.
Blend avocado, mayonnaise, chipotle pepper, lime juice, and 0.25 tsp salt until smooth.
Cook shrimp in a skillet over medium heat until pink, about 5 minutes.
Toast rolls if desired. Spread chipotle avocado mayo on rolls. Add lettuce and 10 shrimp per sandwich. Serve.
Notes
