A flavorful and spicy salmon salad perfect for a quick, healthy sandwich.

Ingredients

Canned Salmon

  • 2 cans salmon (boneless, skinless)
  • 3 tablespoons mayo
  • 2 tablespoons sriracha
  • 2 teaspoons chili crunch
  • 2 green onions green onions (diced) (white and green parts)
  • 1 tablespoon lemon juice
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 slices gluten free bread
  • 4 leaves romaine lettuce
  • 0.5 cup sprouts

Instructions 

  • Drain salmon and place in a bowl.
  • Add finely diced green onions, mayo, sriracha, chili crunch, lemon juice, salt, and pepper. Mix well.
  • Taste and adjust spice if needed.
  • Spread salmon mixture on bread, add lettuce and sprouts, then assemble sandwiches.
