A vibrant and flavorful cauliflower bowl featuring roasted cauliflower, garlic yogurt, and a zesty lemon herb oil, perfect for a healthy and satisfying meal.

Ingredients

Cauliflower

  • 0.25 cup Olive Oil
  • 2-3 tsp Paprika
  • 1-2 tsp Salt + Pepper (as per your preference)
  • 0.5 cup Greek Yogurt
  • 2-3 cloves Garlic Cloves
  • 0.25 cup Parsley (chopped)
  • 1-2 tsp Salt + Pepper (as per your preference)
  • 3-4 tbsp Olive Oil
  • 3-4 cloves Garlic Cloves (minced)
  • 1-2 tsp Chilli Flakes
  • 2-3 tsp Paprika
  • 0.25 cup Parsley
  • 0.25 cup Coriander (destemmed)
  • 0.25 cup Scallions
  • 1 whole Lemon (juiced)
  • 1-2 tsp Salt + Pepper (as per your preference)

Instructions 

  • Wash and break the cauliflower into bite-sized pieces.
  • Mix olive oil, paprika, salt, and pepper; brush over cauliflower and roast at 180°C for 20-30 minutes.
  • Combine yogurt, garlic, parsley, salt, and pepper to make garlic yogurt.
  • Heat olive oil, add minced garlic, chili flakes, paprika, then stir in parsley, coriander, lemon juice, scallions, and seasonings to make lemon herb oil.
  • Assemble by spreading yogurt in bowls, adding roasted cauliflower, and drizzling with lemon herb oil.
  • Garnish with herbs and serve.

Notes

For extra flavor, sprinkle with sesame seeds or additional herbs before serving.
