Ingredients

Meat

  • 4 pieces bone-in, skin-on turkey thighs (about 5 pounds)
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons poultry seasoning (or your preferred All-Purpose Seasoning)

Instructions 

  • Preheat smoker to 180°F. Pat thighs dry and mix olive oil with balsamic vinegar.
  • Brush underside of thighs with oil-vinegar mixture, sprinkle with poultry seasoning, then flip and repeat on skin side.
  • Place thighs skin-side up on the smoker and smoke for 45 minutes.
  • Increase temperature to 375°F and cook until internal reaches 165°F, checking every 10 minutes.
  • Remove from smoker and let rest for 15 minutes before serving.
