A delicious and hearty frittata featuring smoked salmon, fresh herbs, and creamy yogurt, perfect for brunch or a light dinner.

Ingredients

Vegetables

  • 1 piece leek (cleaned with white and light green parts diced)
  • 1 piece shallot (diced)
  • 3 piece scallions (thinly sliced)

Fats & Oils

  • 3 tbsp olive oil (divided)

Eggs & Dairy

  • 10 large eggs eggs
  • 1 cup yogurt (or dairy-free yogurt)

Seafood

  • 8 oz smoked salmon (torn into small pieces)
  • 4 oz goat cheese

Herbs

  • 1 bunch fresh parsley (roughly chopped)
  • 1 bunch fresh dill (roughly chopped)
  • to taste salt and pepper

Instructions 

  • Preheat oven to 375°F (190°C). Sauté leek, shallot, and scallions in 1.5 tbsp olive oil until softened.
  • In a bowl, whisk eggs, yogurt, salt, and pepper. Stir in cooked vegetables, smoked salmon, goat cheese, and herbs.
  • Pour mixture into a greased ovenproof skillet. Drizzle with remaining olive oil.
  • Bake for 20 minutes until set and golden. Serve warm.

Notes

Use fresh herbs for the best flavor and adjust salt and pepper to taste.
