Instructions
Preheat oven to 375°F (190°C). Sauté leek, shallot, and scallions in 1.5 tbsp olive oil until softened.
In a bowl, whisk eggs, yogurt, salt, and pepper. Stir in cooked vegetables, smoked salmon, goat cheese, and herbs.
Pour mixture into a greased ovenproof skillet. Drizzle with remaining olive oil.
Bake for 20 minutes until set and golden. Serve warm.
Notes
Use fresh herbs for the best flavor and adjust salt and pepper to taste.
