A vibrant and nutritious slaw combining colorful vegetables and seeds, dressed with a zesty lemon garlic dressing.

Ingredients

Vegetables

  • 2 cups finely sliced purple cabbage (one small cabbage)
  • 2 cups finely sliced green cabbage (one small cabbage)
  • 2 cups shredded carrots (store-bought or grated)
  • ¼ cup chopped fresh parsley
  • ¾ cup mixed seeds (pepitas, sunflower, sesame, poppy seeds)
  • ¼ cup olive oil
  • 2-3 tablespoons lemon juice (to taste)
  • 1 clove garlic (pressed or minced)
  • ½ teaspoon ground cumin
  • ½ teaspoon salt

Instructions 

  • Combine cabbage, carrots, and parsley in a bowl.
  • Toast seeds in a skillet until fragrant, then add to the bowl.
  • Mix olive oil, lemon juice, garlic, cumin, and salt to make the dressing.
  • Drizzle dressing over the slaw and toss to coat. Adjust lemon juice if needed.
  • Serve immediately or refrigerate to marinate.

Notes

This slaw is best enjoyed fresh but can be refrigerated for a few hours to enhance flavors.
