Ingredients

  • 1 large ripe avocado (must be very ripe for creaminess)

  • 2 scallions (sliced)

garlic cloves

  • 3 cloves garlic, freshly minced

lemon juice

  • 3 tbsp lemon juice

grated parmesan cheese

  • 1/4 cup grated parmesan cheese (Kraft shredded)

extra virgin olive oil

  • 1/4 cup extra virgin olive oil

sea salt

  • 1/2 tsp sea salt

freshly ground black pepper

  • 1/4 tsp black pepper (freshly ground)

  • 1/4 tsp smoked paprika

Instructions 

  • Cook pasta until al dente, then reserve 1 1/4 cups of pasta water and drain.
  • In a blender, combine avocado, basil, parsley, garlic, lemon juice, olive oil, and seasonings; blend until smooth.
  • Mix the blended sauce with cooked pasta, adding reserved pasta water to reach desired creaminess.
  • Stir in cooked chicken, cherry tomatoes, and scallions; top with parmesan and rocket leaves.
  • Serve with sliced sourdough bread on the side.

Notes

Use very ripe avocado for best creaminess and flavor.
