Ingredients

Eggs

  • 4 large large eggs

Tortillas

  • 4 large large flour tortillas (8-10 inch)

Cheese

  • 1 cup shredded cheese (e.g., sharp cheddar and Monterey Jack)

Butter/Oil

  • 1 tablespoon unsalted butter or neutral oil (like avocado or canola)

Milk/Cream

  • 1 tablespoon whole milk or heavy cream (per egg)

Salt

Black Pepper

  • to taste Freshly ground black pepper

Optional Powders

  • pinch pinch of garlic powder or onion powder (optional)

Instructions 

  • Whisk eggs with milk/cream, salt, pepper, and optional powders.
  • Warm tortillas using microwave, skillet, or toaster oven.
  • Heat skillet over medium-low, add butter/oil, then pour in egg mixture. Cook until mostly set, then add cheese and fold to melt.
  • Place a tortilla on a plate, spoon cheesy eggs in center, fold sides, and roll tightly.
  • Serve immediately with sides like salsa, avocado, or sour cream.
