Ingredients

Protein

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1.5 tsp garlic powder
  • 1.5 tsp salt
  • 0.25 tsp black pepper

Carbohydrates

  • 4 large flour tortillas gluten-free option almond flour tortillas
  • 2 cups romaine lettuce, chopped
  • 1 large tomato, diced
  • 0.5 cup Caesar dressing store-bought or homemade
  • 0.25 cup grated Parmesan cheese

Fruits

  • as needed Fresh lemon wedges, for serving

Instructions 

  • Toss shrimp with olive oil, smoked paprika, garlic powder, salt, and black pepper until coated.
  • Preheat grill and cook shrimp 2-3 minutes per side until pink and lightly charred.
  • Warm tortillas in a skillet for 20-30 seconds each side.
  • Spread Caesar dressing on tortillas, sprinkle with Parmesan, then layer with lettuce, tomato, and shrimp.
  • Fold sides, roll tightly, slice in half, and serve with lemon wedges.

Notes
