Ingredients

Protein

  • 14 pieces frozen shrimp

Grains

  • 0.5 cup jasmine rice

Vegetables & Pickles

  • 0.25 cup pickled onions
  • 0.25 cup shredded carrots
  • 0.25 cup cucumber

Herbs & Oils

  • 1 tbsp fresh cilantro
  • 1 tbsp fresh parsley
  • 1 tbsp olive oil

Seasonings

  • 0.5 tsp sea salt (plus additional for seasoning)
  • pepper pepper

Spicy Mayo

  • 0.25 cup mayo
  • 1.5 tbsp sriracha
  • 0.5 lemon lemon, juiced
  • 1 tsp honey
  • 0.25 tsp sea salt

Instructions 

  • Cook jasmine rice according to package instructions.
  • Cook shrimp in olive oil until pink and cooked through, season with salt and pepper.
  • Mix mayo, sriracha, lemon juice, honey, and sea salt to make spicy mayo.
  • Assemble bowls with rice, cooked shrimp, pickled onions, shredded carrots, cucumber, and herbs. Drizzle with spicy mayo.
  • Garnish with additional herbs if desired. Enjoy!
