A delicious vegan wrap combining smoky tofu, fresh vegetables, and tangy barbecue sauce for a satisfying meal.

Ingredients

Protein

  • 15.873 oz firm tofu
  • 4 large soft flour tortilla
  • 0.5 cup canned corn
  • 1.5 cup spinach
  • 0.33 cup barbecue sauce
  • 1 Tbsp vegetable oil
  • 4 clove garlic
  • 0.5 tsp smoked paprika powder
  • 0.33 cup long-grain white rice
  • 1 stalk green onion
  • 1.5 cup shredded red cabbage
  • 0.33 cup vegan mayonnaise
  • 1 Tbsp chipotle adobo sauce

Instructions 

  • Cook rice according to package instructions.
  • Drain and shred the tofu. Sauté with garlic, smoked paprika, and vegetable oil until browned.
  • Mix shredded tofu with barbecue sauce and cooked rice.
  • Warm tortillas and fill with tofu mixture, spinach, cabbage, corn, vegan mayonnaise, and chipotle sauce.
  • Wrap and serve immediately.

Notes

For extra flavor, marinate the tofu in barbecue sauce before cooking.
