A delicious and nutritious parfait combining creamy Greek yogurt, fresh vegetables, and spicy roasted chickpeas for a satisfying snack or light meal.

rinsed and drained garbanzo beans/chickpeas
(15-ounce can)

expeller pressed high oleic safflower oil
(or other high oleic vegetable oil)

Manzanillo Mexican Seasoning
(or to taste)

plain Greek yogurt
(i.e. 2%)

baby spinach
(chopped)

cherry or grape tomatoes

chopped kalamata olives
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with foil.
Toss chickpeas with oil, seasoning, and salt. Roast for 15 minutes, toss, then bake another 10-15 minutes. Cool before using.
Mix yogurt and spinach in a bowl. Slice tomatoes and chop olives.
Assemble: layer yogurt mixture in a bowl or jar, top with roasted chickpeas, tomatoes, and olives.
Notes
