These savory tuna muffins are a quick and nutritious snack, packed with vegetables and cheese for a delicious bite.

Ingredients

Canned Tuna

  • 2 cans Tuna (185g, drained and shredded) (in brine)
  • 1 piece Onion (finely diced)
  • 1 large Carrot (grated)
  • 2 medium Zucchinis (grated)
  • ½ red capsicum Red capsicum (finely diced)
  • 1 cup Cheese (grated)
  • 1 cup Flour (all purpose)
  • 1 tsp Baking powder
  • 5 eggs Eggs (lightly beaten)
  • ½ tsp Dried Oregano
  • to taste salt and pepper Salt and Pepper

Instructions 

  • Preheat oven to 350F / 170C and grease muffin tray.
  • Sauté onion until softened.
  • Mix all ingredients in a large bowl.
  • Spoon mixture into muffin tray, filling all 12 holes.
  • Bake for 30 minutes, then cool before removing.

Notes

Use a non-stick spray or butter to ensure muffins come out easily.
