A delicious and nutritious layered parfait combining Greek yogurt, chickpeas, fresh herbs, and savory pesto for a satisfying meal or snack.

Ingredients

Dairy

  • 1 cup nonfat plain greek yogurt

Legumes

  • 1/2 cup cooked chickpeas

Herbs & Greens

  • Small handful arugula leaves

Condiments & Sauces

  • 2 tbsp arugula pesto (see recipe below)

Grains & Cereals

  • 1/4 cup savory granola (or plain granola)

Produce

  • 1 small clove garlic
  • 3-4 large basil leaves
  • Juice from 1/2 lemon lemon
  • 1/2 tbsp olive oil
  • 1/2 tbsp water

Instructions 

  • Make pesto: Blend arugula, basil, garlic, lemon juice, olive oil, and water until smooth.
  • Layer yogurt, arugula, chickpeas, more yogurt, pesto, and granola in jars or bowls. Repeat layers and top with granola.
  • Serve immediately and enjoy!

Notes

Use fresh herbs for best flavor and adjust layers to your preference.
