Ingredients

Salmon

  • 4 fillets Salmon (fresh or thawed frozen)

Marinade

  • 0.25 cup Extra virgin olive oil (for marinade)
  • 1 tablespoon Lemon juice (or lime juice)
  • 1 teaspoon Oregano
  • 1 teaspoon Dill
  • 2 cloves Garlic (minced)
  • 1 tablespoon Honey or maple syrup (can be omitted)

Grain Base

  • 1 cup Quinoa (or brown rice, couscous, farro)

Vegetables

  • 1 cup Cucumber (diced)
  • 1 cup Cherry tomatoes (halved)
  • 0.5 medium Red onion (sliced)

Legumes

  • 1 can Garbanzo beans (drained)

Sauce Base

  • 1 cup Greek yogurt (base for the sauce)
  • 0.5 cup Grated cucumber
  • 1 tablespoon Lemon juice
  • 1 teaspoon Dill
  • 1 clove Garlic (minced)

Optional Toppings

  • optional Kalamata olives
  • optional Avocado
  • optional Feta cheese

Instructions 

  • Marinate the salmon fillets with olive oil, lemon juice, herbs, garlic, honey, salt, and pepper for 10 minutes.
  • Cook the quinoa according to package instructions and set aside.
  • Grill or pan-sear the salmon until cooked through, about 8-10 minutes.
  • Prepare the yogurt sauce by mixing Greek yogurt, grated cucumber, lemon juice, dill, garlic, salt, and pepper.
  • Assemble bowls with quinoa, vegetables, chickpeas, salmon, and top with yogurt sauce and optional toppings.

Notes

Feel free to customize with your favorite toppings like olives, avocado, or feta for extra flavor.
