Ingredients

Vegetables

  • 2 cups cauliflower florets (fresh)
  • 2 cups broccoli florets (fresh)
  • 1 cup baby carrots (halved)
  • 1 piece red bell pepper (chopped)
  • 1 piece yellow bell pepper (chopped)
  • 4 cloves garlic (minced)
  • 0.25 cup extra virgin olive oil (recommended for rich flavor)
  • 1 teaspoon dried thyme (or fresh)
  • 1 teaspoon dried rosemary (or fresh)
  • to taste salt (fresh ground recommended)
  • to taste pepper (fresh ground recommended)
  • for garnish fresh parsley (chopped)

Instructions 

  • Preheat oven to 400°F (200°C) and prepare a baking sheet.
  • Toss vegetables in a large bowl, then whisk olive oil, garlic, herbs, salt, and pepper.
  • Coat vegetables with the oil mixture and spread evenly on the baking sheet.
  • Roast for 25-30 minutes, stirring halfway through.
  • Let cool slightly, then garnish with chopped parsley before serving.

Notes
