A nutritious and flavorful baked dish combining quinoa, chicken, broccoli, and cheese, perfect for a wholesome meal.

Ingredients

Cooked Quinoa

  • 2 cups cooked quinoa

Cooked Chicken

  • 2 cups cooked chicken

Steamed Broccoli

  • 3 cups steamed broccoli
  • 1 egg egg
  • 0.5 cup chicken stock
  • 2 cups cheese (shredded; divided in half)
  • 0.5 teaspoon dried basil
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon salt
  • 0.25 teaspoon pepper

Instructions 

  • Cook quinoa as per package instructions; steam broccoli until tender.
  • Preheat oven to 350°F (175°C). Mix cooked quinoa, chicken, broccoli, beaten egg, chicken stock, 1 cup cheese, and spices.
  • Pour mixture into a greased 9x9 inch dish, top with remaining cheese, cover, and bake for 40 minutes. Uncover and bake 5-10 more minutes until bubbly and golden.
  • Let cool briefly before serving. Enjoy!

Notes

Use fresh or frozen broccoli for best results.
