A fresh and healthy salmon salad with a creamy dill dressing, perfect for a quick lunch or light dinner.

Ingredients

  • 1 lb salmon filets, uncooked
  • 2 tbsp olive oil
  • to taste salt and pepper
  • 1/4 cup red onion, diced
  • 1/2 cup celery, chopped
  • 2 tbsp fresh dill, chopped
  • 1 tbsp dijon mustard
  • 1/4 cup greek yogurt
  • 1/2 lemon lemon, juiced

Instructions 

  • Preheat oven to 400°F (200°C). Line a baking sheet and roast salmon until it reaches 140°F (60°C).
  • Let the salmon rest, then flake with forks.
  • Mix salmon with onion, celery, dill, mustard, yogurt, and lemon juice. Season with salt and pepper.

Notes

For extra flavor, chill the salad before serving.
