A fresh and hearty salad featuring crisp romaine, savory Parmesan, and your choice of protein, all tossed in a creamy Caesar dressing.
Ingredients

2large headsromaine lettuce, washed, dried, and chopped
1cupcherry tomatoes, halved(optional)
½cupshaved Parmesan cheese
Bread and Protein
3cupsday-old bread, cubed
2tablespoonsolive oil
½teaspoongarlic powder
¼teaspoonsalt
¼teaspoonblack pepper
2piecesgrilled chicken breasts, sliced(or chickpeas or shrimp)
¼cupmayonnaise
2tablespoonsplain Greek yogurt
2tablespoonsfreshly squeezed lemon juice
2teaspoonsDijon mustard
2teaspoonsWorcestershire sauce
1clovegarlic, minced
¼cupgrated Parmesan cheese

Salt and black pepper, to taste
Instructions
Preheat oven to 375°F (190°C). Toss bread cubes with olive oil, garlic powder, salt, and pepper. Bake for 8-10 minutes until golden and crisp. Cool before serving.
Mix mayonnaise, Greek yogurt, lemon juice, Dijon mustard, Worcestershire, minced garlic, anchovies (if using), Parmesan, salt, and pepper to make dressing.
Cook protein: grill chicken, roast chickpeas, or grill shrimp. Slice or prepare as needed.
Toss chopped romaine with half the dressing. Add cherry tomatoes and Parmesan, then combine gently.
Top salad with croutons and protein. Drizzle remaining dressing and serve immediately.
Notes
For extra flavor, add more anchovies or Parmesan as desired.
