A light and refreshing salad combining crisp cucumbers, creamy avocados, and juicy cherry tomatoes, perfect for a quick healthy snack or side dish.

Ingredients

Vegetables

  • 2 cups cucumbers, thinly sliced
  • 1 large avocado, diced
  • 1 cup cherry tomatoes, halved
  • 0.25 cup red onion, thinly sliced (soaked in cold water if desired)
  • 2 tbsp freshly squeezed lemon juice
  • 2 tbsp extra virgin olive oil
  • to taste Salt and pepper

Instructions 

  • Wash and slice cucumbers, halve cherry tomatoes, and dice avocado.
  • Thinly slice red onion and soak if desired.
  • Combine all vegetables in a large bowl.
  • Drizzle with lemon juice and olive oil, then season with salt and pepper.
  • Gently toss to coat evenly and serve immediately or chill briefly.

Notes

For a milder onion flavor, soak sliced onions in cold water before adding.
