A light and refreshing salad combining crisp cucumbers, creamy avocados, and juicy cherry tomatoes, perfect for a quick healthy snack or side dish.
Ingredients

cucumbers, thinly sliced

cherry tomatoes, halved

red onion, thinly sliced
(soaked in cold water if desired)

Instructions
Wash and slice cucumbers, halve cherry tomatoes, and dice avocado.
Thinly slice red onion and soak if desired.
Combine all vegetables in a large bowl.
Drizzle with lemon juice and olive oil, then season with salt and pepper.
Gently toss to coat evenly and serve immediately or chill briefly.
Notes
For a milder onion flavor, soak sliced onions in cold water before adding.
