Ingredients

Dough

  • 1 ¼ cup quick oats
  • 1 cup grated apple (about 2 apples)
  • ½ cup raisins
  • 1 teaspoon cinnamon
  • a pinch salt
  • 1 egg lightly beaten egg
  • ½ teaspoon vanilla extract

Instructions 

  • Soak raisins in hot water for 10 minutes, then drain and dry.
  • Peel, core, and grate the apple.
  • Mix apple, oats, raisins, cinnamon, salt, and vanilla; let sit for 10 minutes.
  • Form dough into small balls and flatten on a baking tray.
  • Bake at 350°F (175°C) for 15–20 minutes, then cool.
