A flavorful and hearty vegetarian skillet dish combining quinoa, beans, corn, and spices, topped with melted cheese.

Ingredients

olive oil

  • 1 teaspoon olive oil

vegetables

  • 1 medium red or yellow onion, diced
  • 4 cloves garlic, minced

spices

  • 0.5 teaspoon ground cumin
  • 0.25 teaspoon chili powder

tomato paste

  • 2 tablespoons tomato paste

quinoa and liquids

  • 1 cup uncooked quinoa, rinsed
  • 1.5 cups vegetable broth
  • 1 cup tomato salsa

canned goods

  • 1 15oz can Del MonteĀ® Golden Sweet Whole Kernel Corn
  • 1 15oz can black beans, rinsed and drained

cheese

  • 1 cup shredded cheddar cheese

optional toppings

  • Cilantro, avocado, jalapeno ((optional))

Instructions 

  • Heat olive oil in a skillet over medium-low heat for 30 seconds.
  • Add onion and cook 4-5 minutes until softened.
  • Add garlic, cumin, chili powder; cook 1 minute.
  • Stir in tomato paste and cook 2 minutes.
  • Add quinoa, broth, salsa, beans, and corn; bring to boil. Cover and simmer 15 minutes until liquid is absorbed and quinoa is fluffy. Top with cheese and cover 2-3 minutes until melted.

Notes

For extra flavor, garnish with fresh cilantro and sliced avocado.
