Instructions
Heat oil in a skillet, sauté onion for 4-5 minutes.
Add garlic and spices; cook for 1 minute.
Stir in tomato paste; cook for 2 minutes.
Add quinoa, broth, salsa, beans, and corn; bring to a boil, then simmer for 15 minutes.
Top with cheese, cover, and cook until melted, 2-3 minutes. Add optional toppings and serve.
