Ingredients

Chicken

  • 4 pieces chicken breasts (boneless, skinless)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.75 tsp garlic powder
  • 0.5 tsp paprika
  • 2 tbsp olive oil (California Olive Ranch)
  • 1 cup broccoli (steamed, finely chopped)
  • 0.75 cup bell pepper (finely diced)
  • 1 cup cheddar cheese (shredded)
  • 1 tbsp mayonnaise (Hellmann's)
  • 0.5 tsp garlic powder
  • 0.25 tsp onion powder
  • 1 pinch salt
  • 1 pinch black pepper

Instructions 

  • Preheat oven to 375°F (190°C). Slice chicken breasts to create pockets.
  • Mix chopped broccoli, bell peppers, cheese, mayonnaise, garlic powder, onion powder, salt, and pepper.
  • Stuff the mixture into chicken pockets and secure with toothpicks if needed.
  • Heat olive oil in a skillet and sear chicken for 2-3 minutes per side.
  • Transfer to oven and bake for 15-20 minutes until cooked through.
