A fresh and easy pasta salad perfect for a quick lunch or side dish, combining cherry tomatoes, basil, and a simple vinaigrette.

Ingredients

Pasta

  • 2 cups Pasta
  • 1 cup Cherry tomatoes, halved
  • 0.25 cup Fresh basil, chopped
  • 0.25 cup Olive oil
  • 2 tablespoons Balsamic vinegar
  • to taste Salt
  • to taste Pepper
  • 0.25 cup Freshly grated Parmesan cheese (optional) (optional)
  • 0.25 cup Pine nuts, toasted (optional) (optional)

Instructions 

  • Cook the pasta in salted boiling water until al dente, then rinse under cold water.
  • Halve the cherry tomatoes and place in a large bowl with chopped basil.
  • Whisk together olive oil, balsamic vinegar, salt, and pepper to make the dressing.
  • Add the cooled pasta to the bowl with tomatoes and basil, then pour the dressing over and toss.
  • Let sit for 15 minutes before serving for flavors to meld.

Notes

For extra flavor, sprinkle with Parmesan and toasted pine nuts before serving.
