A vibrant, crunchy slaw inspired by Korean flavors, perfect as a side or topping.

Ingredients

Vegetables

  • 3 cups thinly sliced cabbage (purple or green)
  • 1/2 tsp sea salt
  • 1 cup grated carrot (about 1 large carrot (~110 g))
  • 1 cup grated apple or Asian pear (about 1/2 large apple (~80 g))
  • 2 stalks green onion (thinly sliced (~25 g per stalk))
  • 2 medium cloves garlic (pressed or grated)
  • 1 inch fresh ginger (grated)
  • 1 ½ Tbsp rice vinegar
  • 1 tsp toasted sesame oil (omit if oil-free)
  • 1/2 tsp maple syrup
  • 2-4 tsp gochujang (adjust for heat)

Instructions 

  • Combine cabbage and salt in a large bowl. Massage for 2-3 minutes until moisture is released.
  • Add grated carrot, apple or pear, and green onions. Toss to combine.
  • Mix garlic, ginger, rice vinegar, sesame oil, maple syrup, and gochujang in a small bowl. Whisk well.
  • Pour dressing over slaw and toss to coat. Adjust seasonings as needed.
  • Serve immediately or refrigerate for up to 2 days.

Notes

This slaw is best enjoyed fresh but can be stored in the fridge for 1-2 days for optimal crunch and flavor.
