Delicious and nutritious protein pancakes perfect for a quick breakfast or post-workout meal.
Ingredients
Dry ingredients

rolled oats (not instant)

scoop
vanilla protein powder (about 30g, high-quality brand recommended)

tsp
baking powder

tsp
cinnamon
1 pinch
salt
Wet ingredients

large
egg (room temperature works best)
1/2
cup
plain Greek yogurt (full-fat recommended for fluffiest texture)
1/2
cup
milk (dairy or unsweetened almond milk)

vanilla extract (pure vanilla recommended)
For cooking

coconut oil or cooking spray (for the pan)
Instructions
Add oats and protein powder to blender; pulse until fine.
Mix dry ingredients in a bowl. Whisk wet ingredients in a separate bowl until smooth.
Combine wet and dry, fold until just mixed. Rest for 5-10 minutes.
Heat skillet over medium, coat with oil. Pour 1/4 cup batter per pancake, cook 2-3 mins until bubbles form.
Flip and cook 1-2 mins until golden. Repeat with remaining batter. Serve immediately.
Notes
For extra fluffiness, use full-fat Greek yogurt and cook on medium heat.
