A delicious and nutritious frittata packed with smoked salmon, fresh herbs, and creamy goat cheese, perfect for a hearty breakfast or brunch.

yogurt, or dairy-free yogurt

fresh parsley, roughly chopped

fresh dill, roughly chopped

smoked salmon, torn into small pieces

goat cheese
to taste

Instructions
Heat 1 tbsp olive oil in a skillet over medium heat. Sauté leek, shallot, and scallions for 1-2 minutes. Remove and set aside.
Whisk eggs and yogurt in a bowl. Stir in herbs, smoked salmon, goat cheese, sautéed vegetables, salt, and pepper.
Wipe skillet, add 2 tbsp olive oil over low heat, pour egg mixture, and cook for 8-10 minutes until sides set.
Transfer skillet to oven, broil for 8-10 minutes, watching to prevent over-browning. Adjust cooking if top browns faster.
Serve with extra herbs. Enjoy!
