A delicious and nutritious frittata packed with smoked salmon, fresh herbs, and creamy goat cheese, perfect for a hearty breakfast or brunch.

Ingredients

Vegetables

  • 1 piece leek, cleaned with white and light green parts diced
  • 1 piece shallot, diced
  • 3 pieces scallions, thinly sliced

Main ingredients

  • 10 large eggs
  • 1 cup yogurt, or dairy-free yogurt
  • 1 bunch fresh parsley, roughly chopped
  • 1 bunch fresh dill, roughly chopped
  • 8 oz smoked salmon, torn into small pieces
  • 4 oz goat cheese
  • to taste salt and pepper

Instructions 

  • Heat 1 tbsp olive oil in a skillet over medium heat. Sauté leek, shallot, and scallions for 1-2 minutes. Remove and set aside.
  • Whisk eggs and yogurt in a bowl. Stir in herbs, smoked salmon, goat cheese, sautéed vegetables, salt, and pepper.
  • Wipe skillet, add 2 tbsp olive oil over low heat, pour egg mixture, and cook for 8-10 minutes until sides set.
  • Transfer skillet to oven, broil for 8-10 minutes, watching to prevent over-browning. Adjust cooking if top browns faster.
  • Serve with extra herbs. Enjoy!
