Delicious and easy to make, these Pesto Chicken Wraps combine tender chicken, fresh vegetables, and flavorful pesto in a warm tortilla.

Ingredients

Protein

  • 2 cups cooked chicken, chopped
  • cup pesto (add more if needed)
  • 3 tablespoons grated Parmesan (optional)

Wraps

  • 4 large tortillas or wraps

Vegetables

  • 4 cups romaine lettuce, shredded
  • 1 cup cherry tomatoes, sliced

Dressing & Sauces

  • ½ cup mayonnaise
  • 2 tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  • ¼ cup grated Parmesan
  • 2 cloves garlic
  • 1.5 tablespoons capers with brine
  • 2 teaspoons Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions 

  • Chop cooked chicken and mix with pesto until evenly coated.
  • Blend mayonnaise, olive oil, lemon juice, Parmesan, garlic, capers, Dijon, Worcestershire, salt, and pepper until smooth.
  • Toss shredded lettuce and cherry tomatoes with half of the dressing.
  • Lay a tortilla flat, add salad mixture, pesto chicken, and extra Parmesan if desired. Roll tightly.
  • Optional: heat in a skillet for 2-3 minutes per side until golden. Slice and serve with extra dressing.

Notes

For a warmer wrap, toast in a skillet before serving.
