A delightful combination of warm roasted peaches, crunchy granola, and creamy yogurt makes this a perfect breakfast or snack.

Instructions
Preheat oven to 325°F (160°C). Mix oats, cinnamon, nutmeg, salt, coconut, pecans, olive oil, maple syrup, vanilla, and almond butter. Spread on a baking sheet and bake for 20 minutes, stirring halfway.
While the granola bakes, slice peaches and toss with sugar. Let sit for 10 minutes.
Line a baking sheet with parchment, spread peaches, and roast at 400°F (200°C) for 12-14 minutes until tender.
Assemble bowls with yogurt, warm peaches, and granola. Serve immediately.
Notes
Store granola in an airtight container at room temperature for up to two weeks. Keep leftover peaches refrigerated for up to 3 days.
