A delightful combination of warm roasted peaches, crunchy granola, and creamy yogurt makes this breakfast both satisfying and nutritious.

Ingredients

Granola

  • 1.5 cups oats
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • pinch salt
  • 0.5 cups shredded coconut (Sweetened or unsweetened)
  • 0.33 cups chopped pecans
  • 2 tbsp olive oil
  • 0.33 cups maple syrup
  • 0.5 tsp vanilla
  • 2 tbsp almond butter

Peaches

  • 3 medium peaches
  • 3 tbsp sugar

Vanilla yogurt

Instructions 

  • Preheat oven to 325°F (160°C). Mix oats, cinnamon, nutmeg, salt, coconut, pecans, olive oil, maple syrup, vanilla, and almond butter to make granola. Spread on a baking sheet and bake for 20 minutes, stirring halfway.
  • Slice peaches, toss with sugar, and let sit for 10 minutes. Spread peaches on parchment-lined baking sheet.
  • Increase oven temperature to 400°F (200°C). Roast peaches for 12-14 minutes until tender.
  • Assemble bowls with yogurt, warm peaches, and granola. Serve immediately.

Notes

Store leftover granola in an airtight container at room temperature for up to two weeks. Keep peaches refrigerated and consume within 3 days.
