2tbspolive oil
0.33cupsmaple syrup
0.5tspvanilla
2tbspalmond butter
Peaches
3mediumpeaches
3tbspsugar

Instructions
Preheat oven to 325°F (160°C). Mix oats, cinnamon, nutmeg, salt, coconut, pecans, olive oil, maple syrup, vanilla, and almond butter to make granola. Spread on a baking sheet and bake for 20 minutes, stirring halfway.
Slice peaches, toss with sugar, and let sit for 10 minutes. Spread peaches on parchment-lined baking sheet.
Increase oven temperature to 400°F (200°C). Roast peaches for 12-14 minutes until tender.
Assemble bowls with yogurt, warm peaches, and granola. Serve immediately.
Notes
Store leftover granola in an airtight container at room temperature for up to two weeks. Keep peaches refrigerated and consume within 3 days.
