Ingredients

Pasta

  • 12 ounces pasta (penne, fettuccine, or spaghetti)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 red bell pepper red bell pepper, sliced
  • 1 yellow bell pepper yellow bell pepper, sliced
  • 1 zucchini zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup broccoli florets
  • 1/2 cup carrots, thinly sliced
  • 1/2 cup vegetable broth
  • 1/4 cup heavy cream (optional)
  • 1/2 cup grated Parmesan cheese
  • to taste Salt and black pepper
  • 2 tablespoons fresh basil or parsley, chopped

Instructions 

  • Cook pasta until al dente and reserve some pasta water.
  • Sauté garlic and vegetables in olive oil.
  • Add tomatoes and broth; cook briefly.
  • Stir in cream if using, then add pasta and toss.
  • Stir in Parmesan and seasonings, garnish, and serve.

Notes

Use fresh herbs for best flavor and adjust seasoning to taste.
