Instructions
Preheat oven to 350°F (175°C). Butter and flour a loaf pan, line with parchment.
Melt butter and keep warm. Sift flours, cocoa, spices, and baking powder.
Whip eggs with sugar, honey, and salt until ribbon forms. Stream in milk, then add flour mixture, then melted butter.
If desired, stir in citrus zest, ginger, or candied peel. Pour batter into pan and bake 45-50 minutes.
Cool, then brush with icing made from powdered sugar, water, and lemon/orange juice.
Notes
For best flavor, let the bread rest overnight before serving.
