A deliciously tangy and creamy cake that combines citrus flavors with a moist, gluten-free base, perfect for paleo, keto, and GAPS diets.

Ingredients

Dry ingredients

  • 0.5 cup coconut flour
  • 4 eggs eggs
  • 1/3 cup honey (or low carb sweetener)
  • 1/3 cup butter (or coconut oil) (melted)
  • 2 tablespoons orange juice (fresh, squeezed)
  • 2 tablespoons lemon juice (fresh, squeezed)
  • 1-1/2 teaspoons vanilla extract
  • 1/2 teaspoon baking soda (sifted)
  • 1/2 teaspoon sea salt
  • 1/8 teaspoon orange oil (or 2 drops orange essential oil)
  • 0.5 cup butter (room temperature)
  • 8 ounces cream cheese (room temperature)
  • 2 tablespoons powdered sweetener
  • 1/2 teaspoon vanilla extract
  • 1/16 teaspoon orange oil (or 1 drop orange essential oil)

Instructions 

  • Preheat oven to 350°F (175°C). Grease an 8-inch pan and line with parchment if desired.
  • Mix dry ingredients: coconut flour, sweetener, baking soda, sea salt.
  • Whisk wet ingredients: eggs, honey, melted butter, orange and lemon juice, vanilla, orange oil.
  • Combine wet and dry, stir until just mixed. Pour into pan.
  • Bake 20-25 minutes until a toothpick comes out clean. Cool completely and chill before frosting.

Notes

Chill the cake before frosting for easier handling.
