A flavorful and easy one-pan meal featuring tender chicken breasts roasted with potatoes and fresh vegetables, seasoned with herbs and spices.

4piecesboneless, skinless chicken breasts
Vegetables
600gbaby potatoes, halved
2largecarrots, sliced
200ggreen beans, trimmed
Seasonings & Oils
3tbspolive oil
2tspsmoked paprika
1.5tspgarlic powder
1tsponion powder
1tspdried thyme
1tspdried oregano
0.5cuplow-sodium chicken broth or stock
2tbspfresh parsley, chopped (for garnish)

Instructions
Preheat oven to 400°F (200°C). Toss chicken, potatoes, carrots, and green beans with olive oil, paprika, garlic powder, onion powder, thyme, oregano, salt, and pepper.
Arrange everything on a baking sheet and pour chicken broth over the mixture.
Roast in the oven for 35-40 minutes until chicken is cooked through and vegetables are tender.
Garnish with chopped parsley before serving.
