Enjoy fluffy, wholesome oatmeal waffles that are quick to make and perfect for a delicious breakfast or brunch.

Ingredients

Dry ingredients

  • 2 cups Old Fashioned rolled oats
  • 2 large eggs (or flax eggs)
  • 3/4 cup milk of choice
  • 2 tablespoons neutral oil or melted butter
  • 2 tablespoons brown sugar
  • 2 teaspoons vanilla extract
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon cinnamon

Instructions 

  • Blend all ingredients until smooth, then let sit for 5 minutes.
  • Preheat waffle iron and lightly brush with oil.
  • Pour batter into waffle iron and cook until golden brown.
  • Remove waffles and keep warm. Serve with maple syrup.
  • Freeze leftovers in a plastic bag; reheat in toaster as needed.

Notes

For extra flavor, add fresh berries or nuts on top.
