Delicious and healthy muffins made with gluten-free oat flour and loaded with chocolate chips, perfect for a quick breakfast or snack.

Ingredients

Dry ingredients

  • 1 1/4 cup oat flour (certified Gluten Free, if needed)
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Wet ingredients

  • 2/3 cup Greek yogurt
  • 1/4 cup avocado oil
  • 1 egg egg
  • 3 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1 cup chocolate chips
  • 2 tsp coarse sugar (optional)

Instructions 

  • Preheat oven to 375°F (190°C). Line a muffin tin for 8 muffins.
  • Mix dry ingredients in a large bowl. Combine wet ingredients in a separate bowl.
  • Pour wet into dry, mix until just combined, then fold in chocolate chips.
  • Fill muffin liners nearly full, sprinkle with coarse sugar, and bake for 20-25 minutes.
  • Cool in tins for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For best results, use certified gluten-free oat flour and high-quality chocolate chips.
