Nutritious Quinoa Lentil Spinach Bake

A wholesome and flavorful baked dish combining quinoa, lentils, and spinach, topped with cheese for a satisfying meal.

Ingredients

Grains

  • 1 cup quinoa, rinsed

Legumes

  • 1 cup cooked lentils (green or brown)

Vegetables

  • 2 cups fresh spinach, roughly chopped
  • 1 small onion, finely diced
  • 2 cloves garlic, minced

Broth & Oils

  • 1 cup vegetable broth
  • 1 tbsp olive oil

Cheese & Spices

  • 1/2 cup shredded mozzarella or cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1 tbsp paprika
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions 

  • Rinse quinoa and cook with vegetable broth for 15 minutes until fluffy.
  • Heat olive oil, cook onion 3–4 min, add garlic, cook 1 min.
  • Add spinach, cook 2 min until wilted.
  • Mix cooked quinoa, lentils, vegetables, spices, and half cheese.
  • Transfer to baking dish, top with remaining cheese and Parmesan.
  • Bake at 375°F (190°C) for 25–30 min, then rest 5 min before serving.

Notes

For extra flavor, add a squeeze of lemon before serving.
