A wholesome and flavorful baked dish combining quinoa, lentils, and spinach, topped with cheese for a satisfying meal.
Ingredients
Grains

quinoa, rinsed
Legumes

cup
cooked lentils (green or brown)
Vegetables

cups
fresh spinach, roughly chopped

small
onion, finely diced

cloves
garlic, minced
Broth & Oils

vegetable broth
1
tbsp
olive oil
Cheese & Spices
1/2
cup
shredded mozzarella or cheddar cheese
1/4
cup
grated Parmesan cheese

olive oil

tbsp
paprika
1
tsp
dried oregano

tsp
salt

black pepper
Instructions
Rinse quinoa and cook with vegetable broth for 15 minutes until fluffy.
Heat olive oil, cook onion 3–4 min, add garlic, cook 1 min.
Add spinach, cook 2 min until wilted.
Mix cooked quinoa, lentils, vegetables, spices, and half cheese.
Transfer to baking dish, top with remaining cheese and Parmesan.
Bake at 375°F (190°C) for 25–30 min, then rest 5 min before serving.
Notes
For extra flavor, add a squeeze of lemon before serving.
