No Bake Almond Bars

Delicious and healthy no-bake almond bars that are easy to make and perfect for a quick snack or treat.

Ingredients

  • 2 cups almond flour
  • 3/4 cup almond butter (thick Barney's smooth variety)
  • 6 tablespoons maple syrup
  • 3 tablespoons melted coconut oil
  • 1/2 cup mini chocolate chips (or chopped regular chocolate chips, vegan if needed)
  • 1/2 cup dried cranberries (chopped)
  • 1/2 cup sliced almonds (chopped)
  • 1/4 cup sweetened shredded coconut

Instructions 

  • Mix almond flour, almond butter, maple syrup, and melted coconut oil until well combined.
  • Add chocolate chips, dried cranberries, sliced almonds, and shredded coconut; stir until evenly mixed.
  • Line a loaf pan with parchment paper and press the mixture firmly into it, spreading evenly.
  • Optional: spread melted chocolate on top. Chill for a few hours or overnight.
  • Remove from pan, cut into bars or squares, and store in an airtight container in the refrigerator.

Notes

For best texture, enjoy straight from the fridge. Softens slightly at room temperature.
