Instructions
In a large pot, combine broth, turkey carcass, onion halves, carrot halves, celery stalk, and bay leaf. Bring to a boil and simmer for 1 hour.
Remove carcass and vegetables, then add olive oil, smashed garlic, minced onion, carrot, and celery. Cook until fragrant, about 5 minutes.
Add sweet potato, sage, bay leaf, and green beans. Simmer until vegetables are tender, about 20 minutes.
Stir in shredded turkey meat and cook for another 10 minutes to heat through.
Season with salt and pepper as desired. Serve hot.
Notes
Use leftover turkey for best flavor. Adjust seasoning to taste.
