(or mixture of vegetable broth, chicken broth and water)

turkey carcass
(all meat removed)
Vegetables

(left whole)

bay leaf
Olive Oil

extra virgin olive oil

(shredded or cubed)
Instructions
Combine broth, turkey carcass, and vegetables in a large pot. Bring to a boil.
Reduce heat and simmer for 1 hour, skimming foam as needed.
Remove carcass and vegetables; strain broth if desired.
Add shredded turkey, green beans, sweet potato, sage, and bay leaf to the broth. Simmer for 20-30 minutes.
Season with salt and pepper to taste. Serve hot.
Notes
Use leftover turkey for best flavor. Adjust seasoning as needed.
