Instructions
Spray a 12-cup muffin tray with non-stick spray and preheat oven to 375°F (190°C).
Sauté prawns in olive oil until pink, then set aside to cool slightly.
Whisk eggs with milk, salt, and pepper until combined.
Distribute bell peppers, spinach, cheese, and a prawn into each muffin cup.
Pour egg mixture into each cup, filling about ¾ full.
Bake for 12-15 minutes until set and golden. Rest briefly before removing.
