Delicious and easy-to-make egg muffins packed with prawns, cheese, and vegetables, perfect for a quick breakfast or snack.

Ingredients

Eggs

  • 6 large eggs
  • 12 medium prawns (peeled and deveined)
  • 0.5 cup grated cheese (cheddar, mozzarella, or Parmesan)
  • 0.25 cup diced red bell pepper
  • 0.25 cup chopped spinach or kale
  • 2 tablespoons fresh parsley or chives (optional)
  • 0.25 cup milk or cream
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Non-stick cooking spray

Instructions 

  • Spray a 12-cup muffin tray with non-stick spray and preheat oven to 375°F (190°C).
  • Sauté prawns in olive oil until pink, then set aside to cool slightly.
  • Whisk eggs with milk, salt, and pepper until well combined.
  • Distribute vegetables and cheese into muffin cups, then add a prawn to each.
  • Pour egg mixture into cups, filling about ¾ full. Bake for 12-15 minutes until set and golden.
  • Let cool briefly, then remove and serve warm, garnished with herbs if desired.

Notes

Use fresh prawns for best flavor. Feel free to customize with your favorite vegetables and herbs.
