Instructions
Spray a 12-cup muffin tray with non-stick spray and preheat oven to 375°F (190°C).
Sauté prawns in olive oil until pink, then set aside to cool slightly.
Whisk eggs with milk, salt, and pepper until well combined.
Distribute vegetables and cheese into muffin cups, then add a prawn to each.
Pour egg mixture into cups, filling about ¾ full. Bake for 12-15 minutes until set and golden.
Let cool briefly, then remove and serve warm, garnished with herbs if desired.
