Ingredients

Bread

  • 2 slices bread (e.g., Dave's Killer Bread) (hearty texture)
  • 3/4 cup tomato sauce (e.g., Rao’s Homemade)
  • 1/3 cup zucchini (finely diced) (about 50 grams)
  • 1/2 cup spinach
  • 3/4 cup cottage cheese (e.g., Good Culture) (adds creaminess)
  • 1/4 cup cherry tomatoes (halved)
  • 1/4 teaspoon garlic powder

Fresh basil

Instructions 

  • Dice zucchini into 1/4-inch pieces and halve cherry tomatoes; prepare spinach, cottage cheese, and basil for assembly.
  • Spread tomato sauce mixed with zucchini and garlic powder evenly on both bread slices.
  • Top each slice with spinach, then dollop cottage cheese and arrange cherry tomatoes on top.
  • Preheat air fryer to 390°F (200°C), cook slices for 8 minutes until golden and crispy.
  • Remove from air fryer, garnish with torn basil leaves, and serve immediately.

Notes

Adding basil at the end keeps it fresh and aromatic.
