A vibrant and nutritious dish combining roasted vegetables with fluffy quinoa, perfect for a wholesome meal.

Ingredients

Grains

  • 2 cups quinoa
  • 4 cups water

Vegetables

  • 2 medium white or yellow onions, chopped
  • 3 cloves garlic, minced
  • 1 green zucchini, diced
  • 1 yellow summer squash, diced yellow summer squash
  • 1 large eggplant, cubed
  • 1 red bell pepper, seeded and chopped
  • 2 large tomatoes, chopped

Additional ingredients

  • Olive oil Olive oil, for drizzling
  • 1.5 tbsp dried oregano
  • 1 to 2 tsp crushed red pepper flakes
  • to taste Salt
  • to taste Black pepper
  • 1 lemon lemon, juiced
  • 0.25 cup pumpkin seeds or chopped walnuts

Instructions 

  • Cook quinoa in water until fluffy, about 15 minutes.
  • Roast chopped vegetables with olive oil, oregano, red pepper flakes, salt, and pepper at 400°F (200°C) for 20-25 minutes.
  • Mix cooked quinoa with roasted vegetables, lemon juice, and seeds or nuts.
