Ingredients

Dry ingredients

  • 1 cup all purpose flour
  • 1 cup sugar
  • ½ cup cocoa powder (dutch processed)
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt

Wet ingredients

  • 2 large eggs (room temperature)
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup sour cream (room temperature)
  • 1 teaspoon espresso powder
  • ½ cup hot water

Frosting ingredients

  • 6 tablespoons unsalted butter (room temperature)
  • 2 cups confectioners' sugar
  • ½ teaspoon vanilla extract
  • ¼ teaspoon kosher salt
  • 2 oz cream cheese (cold)
  • ¼ cup dutch processed cocoa powder
  • ½ tablespoon heavy cream (optional)

Instructions 

  • Preheat oven to 350°F (175°C) and line a mini muffin tin with paper liners.
  • Mix dry ingredients in a bowl; combine wet ingredients separately and then add to dry, mixing until smooth.
  • Fill muffin cups 2/3 full with batter and bake for 15 minutes; cool completely.
  • Beat butter, cream cheese, and vanilla until smooth; gradually add confectioners' sugar and cocoa powder.
  • Add heavy cream if needed for desired consistency; frost cooled cupcakes.
