Ingredients

Dry ingredients

  • 1 cup all purpose flour
  • 1 cup sugar
  • ½ cup cocoa powder dutch processed
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt

Wet ingredients

  • 2 large eggs (room temperature)
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup sour cream (room temperature)
  • 1 teaspoon espresso powder
  • ½ cup hot water

Frosting ingredients

  • 6 tablespoons unsalted butter (room temperature)
  • 2 cups confectioners sugar
  • ½ teaspoon vanilla extract
  • ¼ teaspoon kosher salt
  • 2 oz cream cheese (cold)
  • ¼ cup dutch processed cocoa powder
  • ½ tablespoon heavy cream (optional)

Instructions 

  • Preheat oven to 350°F (175°C) and line mini muffin tins with paper liners.
  • Mix dry ingredients in a bowl. In a separate bowl, whisk eggs, oil, vanilla, sour cream, espresso, and hot water until smooth.
  • Combine wet and dry ingredients until just blended. Fill muffin tins about 2/3 full.
  • Bake for 12-15 minutes, then cool completely.
  • Beat butter, confectioners sugar, vanilla, salt, cream cheese, cocoa, and cream until fluffy. Frost cooled cupcakes.

Notes

For extra flavor, add a sprinkle of cocoa powder on top of the frosting.
