Ingredients

Fruits

  • 1 cup finely diced apple (Fuji, Honeycrisp, Pink Lady, etc.)
  • 1 tsp cinnamon
  • 0.33 cup light brown sugar
  • 0.5 cup avocado oil
  • 1 egg egg
  • 0.25 cup unsweetened applesauce
  • 1 tsp vanilla
  • 1 cup all-purpose flour
  • 0.5 tsp baking powder
  • 0.25 tsp baking soda
  • 0.25 tsp salt

Optional topping

  • cinnamon sugar (for topping)

Instructions 

  • Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  • Mix dry ingredients: flour, cinnamon, baking powder, baking soda, salt.
  • In a separate bowl, combine wet ingredients: eggs, applesauce, oil, vanilla, sugar, and diced apples.
  • Fold wet ingredients into dry until just combined. Divide batter among muffin cups.
  • Bake for 15 minutes or until a toothpick inserted comes out clean. Optional: sprinkle cinnamon sugar on top before baking.
