Instructions
Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
Mix dry ingredients: flour, cinnamon, baking powder, baking soda, salt.
In a separate bowl, combine wet ingredients: eggs, applesauce, oil, vanilla, sugar, and diced apples.
Fold wet ingredients into dry until just combined. Divide batter among muffin cups.
Bake for 15 minutes or until a toothpick inserted comes out clean. Optional: sprinkle cinnamon sugar on top before baking.
