4piecesboneless, skinless chicken breasts(trimmed of excess fat)
1cupmayonnaise or Greek yogurt(for a healthier option)
1cupparmesan cheese or sharp Cheddar, or Asiago(divided)
1tspseasoning salt
1/2tspblack pepper
1tspgarlic powder
Instructions
Cut each chicken breast into 3 large chunks or strips. Soak in buttermilk for 20-30 minutes or overnight.
Preheat oven to 375°F (190°C). Mix mayonnaise, 1/2 cup (50g) parmesan, and seasonings in a bowl.
Place chicken in a baking dish, spread the mixture evenly over the chicken, and sprinkle remaining parmesan on top.
Bake for 40-45 minutes until cooked through. Optional: broil for 1-2 minutes for extra browning.
Serve with steamed broccoli and a dash of fresh parsley if desired.
