This delicious baked chicken recipe features tender, flavorful chicken breasts coated in a creamy parmesan mixture, perfect for a quick and satisfying meal.

Ingredients

Chicken

  • 4 pieces boneless, skinless chicken breasts (trimmed of excess fat)
  • 1 cup mayonnaise or Greek yogurt (for a healthier option)
  • 1 cup parmesan cheese or sharp Cheddar, or Asiago (divided)
  • 1 tsp seasoning salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder

Instructions 

  • Cut each chicken breast into 3 large chunks or strips. Soak in buttermilk for 20-30 minutes or overnight.
  • Preheat oven to 375°F (190°C). Mix mayonnaise, 1/2 cup (50g) parmesan, and seasonings in a bowl.
  • Place chicken in a baking dish, spread the mixture evenly over the chicken, and sprinkle remaining parmesan on top.
  • Bake for 40-45 minutes until cooked through. Optional: broil for 1-2 minutes for extra browning.
  • Serve with steamed broccoli and a dash of fresh parsley if desired.
