Instructions
Preheat oven to 400°F (200°C).
Toss shrimp with olive oil, thyme, oregano, garlic powder, Parmesan, salt, and pepper. Roast for 6-8 minutes until cooked.
Prepare tzatziki: Mix yogurt, cucumber, olive oil, lemon juice, garlic, dill, salt, and pepper.
Assemble tacos: Fill tortillas with lettuce, tomato, shrimp, and tzatziki. Serve with lemon wedges.
Notes
Use fresh ingredients for best flavor. Squeeze excess water from cucumber to keep the tzatziki creamy.
