Ingredients

for the shrimp tacos

  • 1 pound extra large shrimp (21 to 25 per pound), peeled and deveined
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 8 soft tortillas warmed in a skillet
  • to taste shredded lettuce
  • to taste chopped tomato
  • 1 cup plain yogurt
  • 1 cup shredded cucumber (squeeze out excess water)
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried dill
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper

Instructions 

  • Preheat oven to 400°F (200°C).
  • Toss shrimp with olive oil, thyme, oregano, garlic powder, Parmesan, salt, and pepper. Roast for 6-8 minutes until cooked.
  • Prepare tzatziki: Mix yogurt, cucumber, olive oil, lemon juice, garlic, dill, salt, and pepper.
  • Assemble tacos: Fill tortillas with lettuce, tomato, shrimp, and tzatziki. Serve with lemon wedges.

Notes

Use fresh ingredients for best flavor. Squeeze excess water from cucumber to keep the tzatziki creamy.
